Bikini
Makes enough for 10 servings
To make the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Drink (produces 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Citrus Syrup: Put all the ingredients into a pot, heat until it reaches a light boil, agitating until the sugar dissolves. Then, turn off the heat allowing it to cool down fully. Transfer into an sterilised bottle, seal and refrigerate it in the refrigerator, where it will keep for around four weeks.
For the Cocktail Base: Pour the specified liquids in a big jug, leave to sit for an hour, then filter it best through a fine cloth, to ensure it's fully clarified.
To serve: Add 85ml of your cocktail base into your mixing glass containing ice, and stir carefully for about 60 seconds to chill. Filter into an frosted cocktail glass or equivalent, top with a few cranberries and complete it using a brief mist of the essential oil over the drink.
